This quick salad is a great picnic-style take on a Mediterranean classic. It doesn't require lofty, hard to find ingredients... items like cucumbers, tomatoes, black olives, a lemon, and some type of onion can usually be found at the store all year long. Add in a few pantry staples like olive oil, red wine vinegar, a little salt and a few spices... and it's ready to go!

We cut our tomatoes in quarters, but tomatoes cut in half look pretty too! If you're using a larger tomato, dice it into half-inch sized pieces.
In fact, just about all the components in our salad (cucumbers, onion, olives, and tomatoes) were cut into half-inch sized pieces (except the chickpeas, we didn't cut those). A couple of black olives were left whole.
