These fun little Red, White, and Blue Fruit Toasts would make a great addition to any brunch or Americana celebration!

Mixing the semi-sweet lemon ricotta filling and dicing apples for the filling is really the only complex prep-work that needs to be done. There's no "cooking" involved... making this a fun assembly project for the entire family!

Recipe Notes

Balsamic Glaze
Balsamic glaze is not the same as balsamic vinegar, it's a sugar added, thicker, sticky, reduction of... balsamic vinegar. You can make your own at home if you have a couple of ingredients on-hand, but it's pretty stinky. I'd recommend just buying some at the store.

If you would like to make your own, here's what I've used in the past...

  • 1 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon white sugar

Combine all ingredients and simmer in small sauce pan until reduced by half. Be careful not to burn the mix, it's a little hard to judge by sight, because it's already pretty dark in color.

Step by Step Instructions

Lemon Ricotta Fluff
Mix the ricotta cheese, powdered sugar, lemon juice and lemon zest together. If the ricotta mix looks too thick to spread, add a tiny amount of heavy cream... but not too much! We want the Lemon Ricotta Fluff to be spreadable, but not too runny.

Diced Apple Filling
Mix the diced apple, Hellmann's Olive Oil Mayonnaise, chopped walnuts, lemon juice and salt together, until everything is coated with the mayo. Depending on the size of your apple, you may need a little more, or a little less mayo... this is all "by taste". If you would like to add raisins, you can. I'm not crazy about raisins. :)

Toast & Spread
Lightly toast the sliced pumpernickel and brush on some maple syrup to the top side.

Spread a tablespoon of Lemon Ricotta Fluff on top of the bread and make a little indentation to hold the fruit (like a bird's nest).

Top & Drizzle
Add a teaspoon of Diced Apple Filling, a few blueberries and a couple of sliced strawberries to each piece of toast.

Drizzle on a small amount of the Balsamic Glaze and top with a sprig of mint.
