This quick salad is a great picnic-style take on a Mediterranean classic. It doesn't require lofty, hard to find ingredients... items like cucumbers, tomatoes, black olives, a lemon, and some type of onion can usually be found at the store all year long. Add in a few pantry staples like olive oil, red wine vinegar, a little salt and a few spices... and it's ready to go!

We cut our tomatoes in quarters, but tomatoes cut in half look pretty too! If you're using a larger tomato, dice it into half-inch sized pieces.

In fact, just about all the components in our salad (cucumbers, onion, olives, and tomatoes) were cut into half-inch sized pieces (except the chickpeas, we didn't cut those). A couple of black olives were left whole.

After all the ingredients for the salad are cut, it's as easy as combining them into a single bowl. We put the tomatoes in a large 1.5 quart bowl because they are the juiciest, and the bowl is large enough to eventually hold the entire salad. Once all the ingredients are in the large bowl, it can be mixed around gently until everything is evenly distributed.

Make the Dressing
Make the Dressing
After all the ingredients for the dressing are measured, combine them in a separate bowl and give it a stir with a whisk (even a fork or spoon will work, I just thought the whisk looked cool.) The components in this dressing are never really going to "combine" together (they separate really quickly), so it's just about getting the spices and lemon zest evenly distributed. After mixing, pour the dressing over the salad quickly.

Usually the dressing will cover everything in the bowl evenly. You could also carefully mix everything around one more time with a large wooden or plastic spoon, gently bringing the bottom bits to the top until the salad is evenly coated with the dressing. If not serving immediately, cover and refrigerate.
