This Jeepers Peepers is a fun take on a 1940's classic cocktail, the "Bees Knees". The original 321 recipe called for three parts gin, two parts honey, and one part lemon juice. That's a lot of honey for my tastes... especially since most modern day gins are more floral than what they were making in the early 1940's.

I gave this update a cool pink tone because pink lemon drinks are generally thought of as being little sweeter than yellow lemon drinks, and because the pastel color combo looked great for Easter!

To complement the floral notes of the gin and the Chambord, I replaced the honey with "Agave Syrup" — which is actually one part Agave Nectar and two parts water. (Don't use straight
Agave Nectar in this one... you'll end up with a really sweet cocktail.)

The floating Peep, is optional I suppose... but that's why we're calling this one a Jeepers Peepers!

Combine all the ingredients in a cocktail shaker with enough ice to cool the mixture.

If you're using fresh squeezed lemon juice, make sure there's no pits or rind in the juice before adding it to the shaker.

If you don't have Agave Syrup pre-made, it's basically 1 part Agave Nectar and 2 parts water... you could just add those to the shaker, and mix at the same time with all the other ingredients.

Shake, Strain, and Pour
Shake all the ingredients in a cocktail shaker until well mixed (10 or 15 seconds) and then pour into a chilled glass (leaving the ice in the shaker). Garnish with one Peep per glass.
