These Roast Chicken Egg Bites include a little corn, onion, red pepper, and cheddar for a great little breakfast or brunch grab-and-go snack! I've drizzled a little Creamy Bourbon BBQ Drizzle over these for another layer of extra zing!

Our tasty small portion egg bite recipes make four or five egg bites, (depending on the size of the cups) - and make use of a "base" plus "mix-in" kind recipe format. I'll save a couple of tablespoons of mix-ins from a previous meal, and make some tasty egg bits the next morning with the previous day's leftovers. There's really no right or wrong with the mix-ins. If you're missing an ingredient or have something a little different to work with — if it tastes great together outside the egg bite, it'll taste great inside the egg bite!

Recipe Notes

I have a couple different cooking methods posted for the various egg bite recipes on this site as well. They are all pretty much interchangeable. Dedicated egg bite makers or little microwave cups work great, same with sous vide, or the even baked in the oven. Work with whatever you have and what makes you happy!

Step by Step Instructions

Blend the Base
Tossed the eggs, cheddar cheese, cream cheese, and a pinch of salt in a small prep-blender and blend on high for about 30 seconds or until everything is smooth and liquified.

Add the Mix-Ins
Mix remaining ingredients into the egg and cheese mix with a spoon (everything pretty much sunk to the bottom), and reserve a few pieces of the corn, pepper, and green onion for placing on top of each egg bite before cooking (purely for visual purposes).

Oven and Pan Prep
Preheat oven to 350°(f) and spray four or five standard sized muffin cups in a muffin pan with nonstick spray.

Fill the Cups
Spoon out equal amounts of ingredients and egg liquid into four or five muffin cups (these will almost double in height while baking, please adjust accordingly), and place a few of the reserved pieces of corn, pepper, and green onion on top of each cup.

Bake the Bites
Bake for 25-30 minutes, until the eggs are thoroughly cooked.

Enjoy
Remove from oven and jiggle them around a bit, to make sure the sides aren't sticking. Flip the egg bites out (be careful, they're hot) and serve warm.
