This tasty Garlic Shrimp and Cilantro Egg Bite recipe uses our "base plus mix-in" recipe format. I'll save a couple of tablespoons of mix-ins from a previous meal, and make some tasty egg bites the next morning with the previous day's leftovers. There's really no right or wrong with the mix-ins. If it tastes great together outside the egg bite, it'll taste great inside the egg bite!

Recipe Notes

This time, I used a dedicated egg bite maker from Hamilton Beach — it's called the Eggulator. Okay — I totally made that up. But it's a cool name, right?

They actually call it an "Egg Bites Maker #25506" — which is not nearly as cool. (In case you were wondering, Hamilton Beach did not sponsor this post.) Still though… it's a pretty cool machine, that makes clean up super easy.

Step by Step Instructions

Blend the Base
Toss the eggs, feta cheese, romano cheese, and cream cheese (with a pinch of salt) in a small prep-blender and blend on high for about 30 seconds or until everything is smooth and liquified.

Add the Mix-Ins
Mix remaining ingredients into the egg and cheese mix with a spoon (everything pretty much sinks to the bottom), and reserve a few pieces of edamame, green onion, and cilantro for placing on top of each egg bite before cooking (purely for visual purposes).

Cooking
The cooking methods for any of the egg bite recipes on this site, are pretty much interchangeable. This time, I used a Hamilton Beach "Egg Bites Maker Model #25506". It makes two egg bites at a time.

The HB #25506 is basically a mini egg poacher. You fill the first well with water, then fill the egg cups with a good mix of our Garlic Shrimp and Cilantro "broth" (there's a "fill line" on the egg bite maker tray). Just for visual purposes — I put an edamame bean and a couple of tiny carrot, green onion and cilantro bits on top of the mix.

Put the top on and plug it in. After the little light goes out… the egg bites should be ready. Easy peasy.

Enjoy
Remove the egg tray from the HB Egg Bites Maker Model #25506 and jiggle it around a little bit to loosen the sides. Flip the egg bites out (be careful, they're hot). Keep repeating this process until all of the Garlic Shrimp and Cilantro broth has been used. My batch made five decent sized egg bites.

For a little extra special experience, I topped these egg bites with some Hellmann's Cilantro Lime Sauce Drizzle — and it was oh so good!!!!
